Boiled Cow's Mouth (Cingur), Fried Tofu, and Tempe
One of the famous fruitsalad recipes is Rujak Cingur. Rujak Cingur is one traditional fruit salad in Surabaya in which uses Cingur (Cow's Mouth and Cows' Skin - Cecek) in it recipe. These cow's mouth and skin are boiled and sliced, then mixed in the fruitsalad. By the way, here are the Rujak Cingur Recipe:
Several kinds of sliced fruits like cucumbers, boiled krai (bedoyo), bengkoang, young mango, pineapple, kedondong and with addition of lontong (rice cake), tofu, tempe, boiled cow's cingur and skin, and vegetables such as sprouts/bean sprouts, kale and beans. 
All the materials are mixed with a special sauce made from refined petis shrimp, boiled water, palm sugar, chili pepper, fried peanuts, fried onions, salt and thinly sliced green beans (bananas klutuk). 
All the sauces/spices mixed with uleg (pestle) way. When it has been mixed all, it can be served by using pincuk (banana leaves) or plate and crackers.
For people who do not like the boiled ingredients,  they can ask rujak cingur without the boiled ingredients and just using raw fruits.

When the fruidsalad does not use cow's mouth, then this rujak is called as rujak uleg, because the way to make this by using uleg-uleg to mix the spices. Commonly, Surabaya people conduct an annual festival in Surabaya to celebrate Surabaya Anniversary on May.

The other fruitsalad recipe from Surabaya is Rujak Manis or Rujak Buah. This kind of Rujak that uses sweet soy sauce. The ingredients are various of fruit such as papaya, pineapple, bengkoang, manggo, etc that are sliced well. Then the sauces is made from palm sugar, fried ground nuts, fried garlic slices, chilli, salt, and tamarind. These sauce ingredients are mixed well. This Rujak Manis also known as Rujak Tolet, because the fruit slices are touched to sauce when eating.
